Since Maximilian Müller joined the project, two years prior to opening, he spent most of his time engaging with locals in order to uncover the region’s most delicate, sustainable, organic products. Driven by the ambition to create a new alpine cuisine, he combines tradition and modernity.
Max weekly puts together a new menu to meet the season and availability of the area.
